05 Apr Curried Chickpea and Apple Salad
MUSCULAR / SKELETAL SYSTEM – ARMS
400 g cooked chickpeas
1 green apple diced
1 cup cashews
1 cup baby spinach leaves
1 cup Swiss chard coarsely shredded
½ cup bean sprouts
1 cup assorted sprouts
1 heaped tsp curry powder
DRESSING; 1/8 cup apple cider vinegar, ¼ cup olive oil, 1 tsp sea salt
In a mix of coconut oil, sea salt and curry powder, gently fry the chickpeas until golden brown.
Allow to cool and then combine with all ingredients in a salad bowl.
Combine the dressing ingredients and drizzle over the salad just before serving. (serves 2)
